Rub the fish seasonings onto both sides of the fish and set aside. Make sure to use plenty of salt and pepper.
Heat the oil in a nonstick frying pan over high heat. When hot put the fish in and brown quickly on both sides. Now donít be cooking it at this time just get the outsides browned.
Take out the fish leaving the remnants of the oil in the pan. Brown the onion and garlic in the oil. Then put in the cilantro, tomato, chilies, ginger, lemon juice and salt. Stir and cook over medium-high heat until the cilantro and tomato have completely wilted together. Now, spread the sauce around the frying pan and check the salt level to make sure itís to your very specific taste. Then lay the fish on top. Spoon some sauce over the fish and sprinkle the cayenne and garam masala over the top. Bring to a simmer, cover, lower the heat and simmer for about 10 minutes. (If you live in Dallas, just put it outside on the porch.)
