Fish with Chutney
Ingredients
- 4 fish fillets or steaks (swordfish, tuna, red snapper mahimahi or halibut)
- Olive oil
Directions
Here’s two ways to cook fish with the chutney.
- Baked: Arrange 4 fillets of some sort of fish in a slightly oiled baking
dish and top with the Pineapple chutney (or any other chutney you think sounds
good and is biblical). Cook covered for 20 - 25 minutes until the fish flakes.
- Grilled: Marinate the steaks in olive oil and lemon juice for about 20
minutes. Grill the fish until tender and cooked through. Serve topped with
the chutney. Next time I try this I’m going to grill the fish on one side
and then turn the fish over, spread some chutney on the grilled side and cover
with a tin.
