Lentil Soup

This recipe makes a lot of soup so you can freeze it for later. Have plenty of containers available.

Soak the beans overnight. Drain. Sauté vegetables in olive oil with Cajun seasoning, salt & pepper. This will take at least two large skillets. Just split the ingredients between the two skillets. Add the vegetables in order of sturdiness (Carrots first, tomatoes last).

Bring water to boil in a large pot or crock pot. Add beans & sautéed vegetables. Add bay leaf (don’t forget to remove bay leaf before puréeing the mixture). Cover and simmer for at least 4 hours.

Transfer the soup to a blender or food processor and purée the mixture. Did you take out the Bay leaf? This part is tricky because your blender isn’t big enough for all the soup. You’ll have to use intermediate containers. Return the purée to the large pot and continue to simmer for at least 1 more hour or until the soup reaches a thick soupy consistency. I have cooked the soup overnight without incident, although that was by accident. Transfer to storage containers and freeze excess.
